Smoked Sausage and Quinoa Stir-Fry

Ingredients
  

  • 1 cup uncooked quinoa
  • 1.5 cups chicken broth
  • 2 tbsp olive oil
  • 1/4 tsp red pepper flakes more to taste
  • 1 lb. turkey kielbasa or smoked sausage sliced
  • 1/2 cup shredded carrots
  • 1 cup chopped cabbage
  • 1-2 cups other veggies of choice diced bell peppers, sliced mushrooms, broccoli florets, etc

For the Sauce:

  • 1 clove of garlic minced
  • 1/4 cup soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp ground ginger
  • 2 Tbsp brown sugar
  • 1 Tbsp honey

Instructions
 

  • Mix together the garlic, soy sauce, sesame oil, ginger brown sugar and honey in a bowl or measuring cup; set aside
  • Place quinoa and chicken broth into a saucepan and bring to a boil
  • Cook for XX minutes and drain
  • Coat saute pan with olive oil and add crushed red pepper
  • Place sliced sausage, carrots, cabbage and chosen vegetables into pan
  • Cook until sausage is browned a bit on either side and veggies soften
  • Add quinoa to pan and toss with meat and veggies
  • Mix in the sauce to coat ingredients and bring just to simmer before serving
