Heat griddle or large saute pan to approximately 350 degrees
Add oats to blender and pulse into a flour-like consistency
Add flour, brown sugar, baking soda, baking powder and salt and pulse a few more times to combine
Measure buttermilk in a large measuring cup and add the egg and vanilla
Mix a few times with a fork or whisk to break up the egg
Add peanut butter and buttermilk mixture to the dry ingredients
Blend entire mixture together until smooth
Remove blender pitcher from stand and mix in chocolate chips with a rubber spatula
When ready to cook, pour batter onto prepared griddle or pan in similar size circles
Cook for about 3-4 minutes or until bubbles form on the tops
Flip with a large spatula and cook for an additional 2-3 minutes
Serve warm with maple syrup
