Easy Lemon Bars with Almond-Infused Crust

For the crust
- 1 cup flour
- 2 tbsp corn starch
- 1/2 cup butter
- 1/2 tsp almond extract
- 1/4 powdered sugar
For the filling
- 2 eggs
- 3/4 cup granulated sugar
- 1/3 cup brown sugar
- 1/2 tsp baking powder
- 1/4 tsp salt
- Zest and juice of 1 lemon
For the crust
Heat oven to 350 degrees
Mix together flour, corn starch, butter and almond extract
Slowly add powdered sugar until combined
Press into an 8X8 pan coated in butter or non-stick spray
Bake for 15 min
For lemon filling
Beat eggs and both sugars together with a mixer
Add baking powder and salt and mix until combined
Blend in lemon zest and juice
Pour over the crust once removed from oven
Bake 20 more minutes until lemon filling sets
Set bars aside to cool
Sprinkle with powdered sugar before serving
