Hi, I’m Amanda.  I’m a Minnesota mom who was looking for an outlet for two things: my love of writing, and my love of kitchen concoctions.  I’m married to an amazing guy and we have spent the last 15 years raising three very energetic boys.  We try our best to keep them fed and busy, which is what you will find here.

On the fed piece:  My friends and family know me well, so for our wedding, my husband and I received a bunch of different cookbooks.  Everything from hometown favorites to pretty, professional versions.  3 years into our marriage, we also received the well-loved and well-worn recipe “journal” handwritten by my husband’s grandmother.  They amount to all the amazing tools one should need to keep a house of boys from going hungry.  (Ha!  Who am I kidding.  I have a teenager – he’s always hungry.)

I will confess that even with that fantastic library, I am a “play with your food” kind of cook.   So I started with this amazing base of yummy outlines, and commenced futzing (MN slang for experimenting).  What has come out are lots of pen to pages, and cookbooks that now look like 1980’s Trapper Keepers.  Getting little boys to eat can be a tricky business, so I got creative as I tried to cater to tiny tastebuds.

On the busy side:  We love to spend time together as a family. We are frequent travelers, and try our best to instill a sense of exploration in our boys. (Not that they need a ton of encouragement – did I mention they do not lack for energy?)  We love to tour this incredible state we call home, and also have a lofty goal of exposing our kiddos to the other 49.

As such, friends and family frequently ask for travel tips and tricks.  We have some great experiences, but as you may expect with 5 travelers…. we have had some interesting moments.  I am happy to share the good, the bad and the hilarious – because there has been plenty!

Why “Nestled on Norway” you ask? It is the street we call home – the place that all of this starts.
